Pizza Dough

1 pkg. dry yeast (1 scant  tablespoon)
1 tsp. sugar
1 cup warm water
3/4 teaspoon salt
2 tablespoons olive or vegetable oil
1 cup whole wheat  flour
2-2 ½ cups flour

1.  Combine yeast and sugar in water.   Stir until dissolved.
2.  Add salt, oil, whole wheat flour and 1 ½ cups flour.  Stir well.
3. Add enough remaining flour to make a soft dough.
4. Knead on lightly floured surface until smooth and elastic, about 5 minutes.
5. Place in greased bowl, turning to grease top.
6. Cover. Let rise in warm place until doubled, about 20-30 minutes.
7. Lightly grease 1 (14" round or 2 (9 “ deep dish) pizza pan(s).
Pat and stretch to fill pizza pan(s). Top pizza as desired.
8. Bake at 400 degreees for 20 to 30 minutes. Baking time depends on size,
thickness of crust, and selected toppings.


Variations:
Cornmeal pizza dough: Omit whole wehat flour and use ½ cup cornmeal and 2 ½-3
cups flour.

Herbal pizza dough: Add 1 ½ tsp. Dried basil, oregano, or rosemary leaves, and 1
clove finely minced garlic along with dry ingredients
